How do you have energy to cook?

Happy Monday! I hope that everyone is doing well! Mondays are always so hard. However, the Monday after a holiday break is always so much harder! I was only off for two weeks but in that time my sleep schedule got all off. Talking to friends and all of us were trying to get to bed before 1 last night! Haha this morning was rough! Luckily it was a work in my classroom day. I for sure got there later than I wanted to and I am not sure that I would have been able to be on it you know. Tomorrow is a day of meetings and then the students come back on Wednesday. Hopefully by then I will be ready… Hopefully! Haha

When we were kids we ate dinner together almost every evening. School was important to my parents, let’s be honest when we were kids it was more important to them than it was to us! Haha Every night at dinner my dad would ask us what did you learn today? I remember walking home from school with my brother and I would ask him “what are you going to tell dad you learned today? You better figure it out before dinner!” When I tell the students this story I tell them that my dad wouldn’t let us eat until we said something but really that is just for dramatic effect! Haha Joking aside though dinners with the family are some of my greatest memories. I have a lot of stories from those dinners. 

Growing up both of my parents worked. I used to like to tell people my dad worked the streets and my mom collected! My dad worked for the streets department for the city and my mom worked in  billings and collections for a doctors office! Sorry I got distracted back to my point. My parents worked a full time job yet they came home and we had a home cooked meal most nights. My mom would make dinner, we would clean up and do the homework thing or the errands thing. Now looking back I have NO IDEA how she did it! As an “adult” now I get home from work and sometimes I barely have the energy to make some Ramen noodles! My mom is a superhero in my eyes! I get into the bad habit of just grabbing something on the way home so that I don’t have to worry about it when I get home! You people that go home and make dinner and clean up and do lesson plans and grades and help kids with homework and all of those things… You are also a super heros! 

I am always looking for easy dinner ideas. I made one the other day. It was a can of cream of chicken soup and a package of chicken tenderloins. I just dumped the soup over the chicken and baked it at 400 degrees for 25 minutes. I added cheese after it was done and let that melt but that is optional. I served it over pasta for one meal and over rice for another. It was good! I highly recommend it! Another thing that I highly recommend is a potato express. It is this little pocket of amazingness. You put your raw potatoes in it and then you microwave it for like 3 or 4 minutes (depends on the number of potatoes you are making) and when the microwave stops you have a nice little baked potato! It has been the easiest dinner ever! 

If you have any easy recipes that are fast and easy that you are willing to share I would love to try them! I do have a crockpot that doesn’t get enough use and an air fryer that I tend to use just on frozen foods! Well It is getting late and tomorrow is going to be a long day if I don’t get to bed soon!
